Crispy Kangkong

My son is a very picky eater, letting him eat veggies is a real challenge to me. He eats starchy food {i.e potatoes, kalabasa, papaya and sayote}, but he does not love to eat green leafy veggies. But I am glad that he loves my “Crispy Kangkong”, he told me that it is like his fave yummy chips. You may also try to serve it to your picky eaters.

Crispy Kangkong Ingredients:
1 bundle of kangkong (use the leaves only)
1 egg (beaten)
1 cup cold water (to make it crispy)
1/2 teaspoon salt (asin)
1/4 teaspoon pepper (paminta) – or as desired
2 cups cornstarch or all-purpose flour
Cooking oil
salt and pepper to taste (or Magic Sarap)

Mayo Dip Ingredients

1/2 cup mayonnaise
Catsup (as desired)
Dash of pepper (as desired)

Cooking Procedure

  1. Use the kangkong leaves only {the stems can be used in other recipes.
  2. Wash the leaves and dry.
  3. Mix the batter : egg, cold water, cornstarch/flour, salt/pepper (or maggi sarap).
  4. Dip the Kangkong leaves. Mix until all the leaves are submerged in the batter.
  5. Fan fry the leaves into heated oil. Make sure that the oil is really hot to make it crispy. Spread the leaves when submerging it into the hot oil. Remove from heat when crispy and golden brown.
  6. Remove excess oil by putting it in a plate underlined with napkin to absorb excess oil.
  7.  Serve with mayo dip
  8. Enjoy!

As a Mom we really need to be creative and innovative.  We have to adjust to our kid’s needs.

    Thanks for the new recipe, hindi pa ako nakktry nito. Adobong kangkong lang usually ang pnrepare namin, haha or panahog sa sinigang.

    lucky me,my boys are not picky eater.they both loves veggies and the oldest fav is kangkong.

    Wow! I’ve never tried this one. Will definitely give it a go. We don’t have kangkong here in Sweden though but will try it with spinach. Not sure if it will work but it might be worth the try. Thanks for sharing!

    I also love crispy kangkong. Hehehe! I found it really weird the first time I encountered it but it tasted just fine. It’s a really good alternative to junk food chips. =)
